Mr. BBQ's Smoked Pulled Chicken Sandwich

I love South Carolina Barbecue! The tang of mustard with pork is unbeatable! But what if you're not a pork lover? Well, how about trying smoked chicken. WOW! It's great. You gotta try it.

Ingredients:
1-Whole Chicken
1.5 T seasoning (seasoned salt or mildly spiced dry rub)

Mustard Sauce:
1/2 c. yellow mustard
1/4 c. apple cider vinegar
1/2 T crushed red peppers
1 t. melted butter (or olive oil)
1 t. melted honey
2 T. red pepper sauce

Chicken Preparation:
Remove the chicken from the package, remove giblets, use a knife to cut off fat around tail and neck end-to enlarge openings for better smoke penetration. Next apply your dry rub or seasoning to the inside and outside of the bird.

Cooking:
Get your grill, pit, smoker, barbecue going. Place the bird on the grill and begin to smoke. Smoke for approximately 3.5 hours, or until the chicken reaches 170 degrees. Remove from the grill and allow to cool down for about 20 minutes.

Sauce Preparation:
In a big bowl combine all of the sauce ingredients together. You want the resulting sauce to be fairly thick, not runny.

After the chicken is cooked:
Remove the skin and use gloved hands to pull the chicken meat off the carcass. You can use two forks to shred the meat or chunk it up. Next, add the chicken meat to the mustard sauce and mix together so that it is thoroughly coated with the sauce.
Spoon out this mixture onto toasted sesame seed buns or pita bread. Mmmmmhummm! Lip smakin' good baby!
