BBQ-U 2008

2008 marks the 15th year of BBQ-U, my six hour outdoor cooking training course.

Attendees will receive a 100+ page workbook, prizes, lunch, diploma and a wealth of knowledge, helping you to become a more confident, competent outdoor cook. The course is designed for anyone who loves to cook outdoors. Guys and gals are welcome, as are couples. It doesn't matter if you cook with charcoal, gas, wood or pellet. You'll come away with a new appreciation for cooking outdoors.


Some sample topics:


  • Meat-the foundation of great barbecue. Meat grades, how to select it, what the meat department doesn't want you to know! Insider tips for beef, pork, chicken and fish.


  • Dry Rubs-the next most important ingredient to great barbecue. You'll learn the secrets to making championship quality dry rubs, and get a chance to get your fingers spicy by making up your own dry rub recipe in class.


  • Smoke Secrets--there are subtle secrets to infusing your barbecue with wood smoke. You'll learn insider tips on how to create the best wood smoke to flavor your meat.


  • Untold pitmaster secrets are revealed during the course of BBQ-U. We've got six hours to fill, and fill it we do with information gleaned from our decades of outdoor cooking experience. This course provides a tremendous foundation for the novice to advanced outdoor cook. We hope to see you there!
